Soft and Chewy Gingersnap Recipe

These are my FAVORITE Cookies...the perfect combination of sweet and spice!


Ingredients:

  • 1 cup of soft butter (not melted)

  • 1 cup sugar

  • 1/2 cup molasses

  • 2 tablespoons vegetable oil

  • 1 1/2 teaspoons vanilla

  • 2 1/4 teaspoon baking soda

  • 1 teaspoon salt (I like pink Himalayan salt the best)

  • 2 teaspoons cinnamon

  • 1 ground teaspoon cloves

  • 1/2 teaspoon nutmeg

  • 1 teaspoon ginger

  • 2 eggs

  • 3 1/2 cups flour

Directions:

  1. Using a mixer on medium speed, cream together butter and sugar until smooth (about 5 minutes).

  2. Add in the molasses, Vegetable oil, vanilla, baking soda, salt, and spices. Mix until well combined. (2-3 minutes)

  3. Add in the eggs one at a time, and beat until smooth.

  4. Slowly add in the flour, one cup at a time until fully incorporated.

  5. Cover bowl with foil and chill dough in refrigerator for 1 hour

  6. Scoop the dough into balls (golf ball sized) and roll in granulated sugar. Bake for 12 minutes at 350°, the cookies will still be soft and won't look quite done. Remove from oven and drop on counter (I swear it matters!!!) and let cookies cool on the baking sheet for five minutes.
